For those of you who have, or will have, zucchini coming out the wazoo this summer, here is a recipe I got from my friend Debora. I think she called it Pizza Soup so more people would eat it. In certain areas of the country this is the only time of year you must lock your car, or else it will be filled with zucchini when you return.
2lbs zucchini, sliced in 1" pieces
1c chopped onion
2qt tomatoes or juice or combination
1tsp Italian seasoning
1/2 tsp basil
1/2 tsp garlic powder
Brown sausage and drain fat. Add celery and cook 10 minutes. Add remaining ingredients and simmer 30+ minutes. Serve with garlic bread and salad.
