Ginger Chews

'Tis the season for Ginger Chews. I only make these in the fall because I want to keep them special, but oh how I love them!   I made a pan by scratch on Tuesday for our community group dinner, and then decided there's gotta be a faster way.  I got a pouch of molasses cookie mix, mixed it as directed (using a pastry blender and much elbow grease) and pressed it into an 8" pan.  Bake this for 30 minutes, allow to cool before cutting.  The center is gooey like brownies so if that skeeves you out you can bake 5 minutes longer.

What?  What baby?  Oh, him.  He's been asleep all month, which has made for some great snuggling.  Things are going better with Olivia although she's still 2-going-on-3.  She's napping consistently again, thanks to her daily Dum-Dum bribe incentive. 


Olivia loves Bowen, loves to touch and kiss and hug him. Bowen gets up just once during the night, which is awesome.  We're starting to see more of his eyes being open, too. I'll post more pictures soon from his newborn photography session.  Here he is in the cute little aviator hat my friend Lori sent.


Okay, my time is ticking away and both kids are sleeping (!!!), so I'm going to get some work done.  Happy Thanksgiving and I wish safe travels for you all!

The fact that you can even THINK about baking with a newborn and a toddler makes you a super Amazonian wonder woman in my book!

AAAHHHH!!!!!! NO!!! Don't post about Ginger Chews!! And don't tell me it's easier than ever!!! I just talked my frantic little nesting self out of making them!! Now I'm going to HAVE to put Molasses cookie mix on my "last minute grocery list"...
